Moose burger recipe

Ingredients (3-4 servings)

  • 500g minced venison
  • 1/2 yellow onion
  • 50g pancetta or bacon
  • 1 tsp mustard
  • Salt and pepper
  • 1 tbsp olive oil


    Place the minced moose in a bowl. Grate the onion and chop the pancetta/bacon. Add it to the bowl along with the mustard and olive oil. Work everything together into a smooth mass. Add salt and pepper while mixing.

    Take out a reasonable amount of the mince mixture and form a burger. One tip is to use a 2 cm high plate with straight edges as a mould. Alternatively, you can take a plastic bottle and cut out a 2-3 cm wide "ring" and use it as a mould. Pack the mixture relatively thickly and then poke it out with a knife.

    If you want to grill the burger, another tip is to first fry it in a hot frying pan for 20-30 seconds on each side before putting it on the grill. This way it will hold together better. Also, brush the burger with olive oil just before you put it on the grill.

    Grill/fry for about 3-4 minutes on each side or longer for a better grill. You can use a lid to make them juicier, but it's entirely up to you.

    It's worth noting that as a Swede, you can of course have lingonberry jam for everything, including hamburgers as we show in the picture.
