Suovas, thinly sliced and hastily fried on high heat just before serving, is probably the world's most delicious smoked meat.

Suovas, Sami for "smoked", are various forms of salted and lightly smoked reindeer meat. Reindeer meat is first salted for about a day and then traditionally cold-smoked in a hut.

Birch or willow is usually used for smoking. It is important that the wood is removed to avoid soot. Smoking takes a relatively long time, often one to two days.
