Reindeer fat or reindeer feta is an unusual and sought-after product from the reindeer. It is usually said that the fat from reindeer is so good because new fat is produced every year after the lean winter. It is also one of the healthiest fats you can find because it is high in Omega3.

The reindeer fat is sent vacuum-packed and frozen.

    Becomes perfect base for sauce and broth

    This was the first time I used reindeer feta, but it's already a favourite for marinades, sauces and broths. A tip: collect all the onion skins, carrot ends etc in a box in the freezer during the week. Fry them slightly with the reindeer fat. Add water, thyme, salt, pepper and ground celery seeds. Leave to simmer for an hour. Strain. It makes a fantastic (+ cheap + eco-friendly) broth.
