About the product

The fillet, or tenderloin, is the finest cut of the fallow deer and one of our most popular game details. The venison has a slightly milder game flavor compared to e.g. moose.

We think that this luxury product from our Swedish forests is best cooked simply in a hot pan and served with a rich and tasty venison sauce.

Fry for 1-2 minutes on each side depending on thickness. Feel free to use plenty of butter and scoop at regular intervals. Salt before but pepper after frying. Do not fry for too long as the meat must not become dry - The internal temperature must not exceed 56 degrees.

If necessary, let it rest for a minute under baking paper before slicing it up. Serve with a good game sauce, blackcurrant jelly and oven-roasted root vegetables. Enjoy your meal!

If you are grilling red deer fillet, it is best to grill it hard for a short time so that it takes on color. Then let it creep up to 52-55 degrees and you get a fantastic medium/rare meat.

The fillets are relatively small compared to e.g. moose and most packages contain 2-3 fillets. They weigh 100 - 300 g each and in the larger packages there are therefore more fillets.

The fallow deer fillet is sent vacuum packed and frozen.
