True Swedish Kalix löjrom, or "Gold of the Sea" as it is also called, is a true Norrbotten luxury product. KKalix löjrom, with its extra small grains and slightly salty flavour, is a highly appreciated delicacy that is produced through a largely manual process. Vendace roe is something to be enjoyed on special occasions when you really want to get the chance to enjoy the best that Swedish fishing has to offer.

Kalix vendace roe is the first Swedish food to be awarded the EU labelling of protected designation of origin (PDO). This comes with a lot of requirements for both fishing and production, where everything must be of the highest quality.

The roe comes from the small salmon fish vendace fished in the Gulf of Bothnia off Haparanda, Kalix, Luleå and Piteå. The fishing area extends from the mouth of the Åbyälven river in the south to the mouth of the Torne river in the north and a maximum of four miles from the coast.

The best way to thaw vendace roe is to do it slowly, i.e. in the refrigerator. Then you should preferably eat it as soon as possible, preferably within a day. It is best if you unscrew the lid and leave it on the jar during thawing. Be sure not to touch the roe until you are sure that they are thawed, otherwise they will spoil.
