Mufflon lives wild in various parts of southern Sweden. The availability of this wild sheep is quite small, which makes this fine game meat a unique and somewhat difficult to obtain delicacy.

 

The mouflon sheep is a very exciting game detail to offer - precisely because it is so rare.

The meat of the mouflon sheep has a flavour that is more similar to deer than to lamb and sheep. The meat is also darker and more flavourful than its domesticated counterparts. That the flavour is more reminiscent of game makes this sheep product a little more interesting for those who want to try something new.

It's easy to prepare the mufflon sirloin: melt butter in a frying pan, preferably with garlic and a spice such as thyme. Salt and pepper the mufflon meat and brown it. Reduce the heat and fry the meat to an internal temperature of about 56°. Sprinkle the outer fillet with the flavoured butter from time to time. Let the mufflon fillet rest for about 10 minutes before slicing it.

          Once the fat, skin and sinew were removed, the cooked meat turned out to be excellent. Mild gamey flavour, no "kofta" taste and perfectly tender. Taste like venison I think.
          Will buy this again and highly recommend!
