About the product
The tenderloin is one of the finest parts of the fallow deer and is one of our most popular products. It has a slightly milder game flavour compared to moose, for example.
Deer sirloin is perfect as a main course for a family dinner or dinner with friends when you want to serve something really special. You can prepare it in a simple way in a pan or on the grill and get a fantastic result.
We usually cook it in a simple way in a hot pan, a few minutes on each side. Use plenty of butter and baste at regular intervals. Salt before but pepper after frying.
Do not overcook as it must not become dry - make sure the internal temperature does not exceed 55 degrees. Let it rest for a few minutes under baking paper before slicing it. Serve with a good game sauce, blackcurrant jelly and oven-roasted root vegetables. Very, very good!
This meat is also quite easy to grill. It has no thick coat but only a thin silver skin, you want to remove this skin as it does not add anything. Grill the meat hard for a few minutes so it gets a lot of colour and then put it on the side of the grill where it is less hot and let it cook. Season only with salt and pepper, no grill seasoning as the meat is already flavourful. Deer tenderloin is extremely tender and evenly thick throughout, which makes it easier to grill well.
