Make sure the meat is at room temperature before cooking. This is a front piece and can therefore withstand more heat. Fattier steak details are cooked at a higher temperature in order for the fat to melt and give juiciness to the meat and reduce chewing resistance. Aim for an internal temperature of around 60 degrees when the piece is taken off the grill or out of the oven. Let rest at least 10 minutes before serving.
The entrecote is also excellent for slicing with a sharp knife and grilling for a few minutes over direct heat or in a hot pan. Preferably slice thick slices to preserve the juiciness best.

Entrecôte is a nice detail that sits right above the sirloin steak. Although venison is generally very low in fat, entrecôte, with its slightly higher fat content, is good for grilling.
