A spontaneous dish. Simple but luxurious meal for family and friends.
Ingredients
Wild duck breast
-
5 wild duck breasts (approx. 400g)
Marinade
-
1 dl white wine
-
5 crushed juniper berries
-
1 pinch black pepper
-
A pinch of rosemary
-
1 clove pressed garlic
Sauce
-
Cream
-
Meat broth
-
Soya
For frying
-
Butter
For serving
-
Sea salt
-
Olive oil
Instructions
The breast fillets
Mix together the marinade in a smaller baking dish.
Place the breast fillets in the marinade.
Let marinate at least 40 minutes.
Tillagning
Melt the butter in a frying pan.
Fry the breasts for about 3 minutes on each side.
Remove breasts from skillet. Let your breasts rest for a few minutes.
The sauce
Add cream and meat broth in the sauce to the frying pan. Pour in a little water if needed.
Season with salt, pepper and crushed juniper berries.
Add a little starch if the sauce is too thin.
Pour in a little soy sauce to get a more beautiful color.
You can taste with a little extra white wine in the sauce.
Servering
Carve the meat
Drizzle with a little olive oil and sprinkle with sea salt.
Serve with oven-fried potatoes, some salad and blackcurrant or rowanberry jelly.
