It is a perfect recipe for both moose and bear. If you use bear, it is very important that the meat is marinated for a long time, preferably 3 days. It is of course fine to use 800 - 1000 g of any wild game meat.

Ingredients

1000 g moose stew cuts

1 large red onion

1 carrot

Black and white peppercorns (about 10 of each)

2 whole cloves of garlic

4 dl red wine
- blank

2 tbsp blue cheese

3 dl cream

1-2 tsp blackcurrant jelly

2 tbsp cornstarch

Marinade
Slice the onion into large slices and divide the carrot into 2-3 cm pieces.
Put the meat, onion, carrot, garlic cloves, paper grains and wine in a sealed plastic bag in the fridge. Prefferable in a bowl.
Let the marinade sit for 3 days.
Moose stew
Take out the moose stew cuts and brown them in a hot pan. Then put them in a pot (a large pot also works well).
Strain the marinade and pour it over the stew pieces. Let it cook covered with a lid on low heat until the meat is really tender, about 60-90 minutes.
Add cream, blue cheese and jelly. Season with salt and pepper if necessary.
Mix the cornstarch with water and stir into the stew until you get a nice consistency.

Man kan även använda konjak eller en mild whisky…blir väldigt mört och gott samt sila av och gör en sås med grädde och nymald grönpeppar. Supergott.
