Flatiron steak, or hobo steak as it is sometimes called, is a nice detail of reindeer meat that is easy to succeed with. Just cook it briefly over high heat in the frying pan (don't let it get dry) and let it rest for a few minutes. Slice and serve.

Curious about this cut that appears in magazines when it is barbecue season, I wanted to try. I'm used to handling reindeer meat so it turns out perfectly, but the two pieces of hobo steak that I tried to cook as I do with reindeer tenderloin or reindeer steak don't work here. How do you DO it? Between the membranes, the meat was fine, but it was hard to cut away from the tough membranes. I probably would have done it differently, but HOW? Please tell me on your website!

Followed recommendation and cut off the tendon. Became smaller pieces but incredibly tender and delicious.
